INGREDIENTS
3 ¼ Maisha StoneGround Wholemeal Atta Flour
½ Teaspoon of Baking Soda
1 Teaspoon of Baking Powder
6 Eggs (with yolk)
1 Teaspoon Cinnamon
½ Teaspoon Nutmeg
350Gms Grated Carrot
1 Cup Brown Sugar
1 ½ Sunflower Oil
For the icing
- 675Gms Cream Cheese
- 275Gms Butter
- 2 Teaspoons of Vanilla Extract
- 4 cups of Icing Sugar
PREPARATION
Preheat the oven to 180
In a large mixing bowl, sieve the Maisha Stone Ground Wholemeal Atta flour
Add the baking powder and baking soda to the flour mixture and mix
Add the cinnamon and nutmeg into the mixture and mix
In a second mixing bowl, add the grated carrot and brown sugar then mix and let sit for 20 minutes
Add the eggs and sunflower oil into the mixture and mix then add it to the bowl of the dry flour mixture
Fold the final mixture gently.
Bake the mixture for 45-50 minutes and let it cool down.
For the icing, pour the cream cheese and butter into a bowl and mix
Add the vanilla extract and icing sugar into the mixture and mix
Apply the icing sugar on the cake and serve.
