2¾cup Lukewarm water
Sugar 2 tsps
2 tsps instant dry yeast
7 cups maisha stoneground atta flour 7 cups
Salt 2 tsps
Olive oil 7tbsps
Add 2 tsps of sugar to 2¾ lukewarm water and stir
Add 2tsps instant dry yeast to the mixture and let it bloom for 5 minutes.
In a bowl,sieve 7 cups of maisha stone ground atta flour and add 2tsps of salt then whisk
Create a wall in the flour mixture and add 7tbsps of olive oil then mix in oil
Add the yeast mixture to the flour mixture and mix it well then knead for 10 minutes
Add olive oil to the kneaded flour and let it rise for 4 hours
Gently degas the dough and divide into four then cover and let it rise for 1 hour
Spread dough on a baking tray and spread pizza sauce on the dough.
Add mozzarella cheese on top
Add cherry tomatoes and more cheese.
Drizzle olive oil on top
Bake at 240° for 10 minutes
Top with fresh basil
