COCONUT MANDAZI

INGREDIENTS
2 cups of Maisha Mandazi Flour
½ teaspoon of Salt
4 tablespoons of Margarine or butter
2 tablespoons of Sugar
3 tablespoons of dried grated coconut
½ cup of lukewarm water
Cooking oil

PREPARATION
Add 2 cups of Maisha Mandazi Flour into an empty bowl
Add ½ teaspoon of salt, 4 tablespoons of margarine/butter
Stir to mix well
Add 2 tablespoons of sugar and 3 tablespoons of dried grated coconut.
Stir to mix well
Add ½ cup of lukewarm water
Stir then knead the mixture into a sizable ball
Place the kneaded ball into a bowl to rest and cover with plastic foil for 15 minutes
Heat 3 inches oil in a medium heavy-bottomed saucepan (350⁰C)
Add about 6 dough triangles at a time to pot and fry until golden brown and cooked through, about 1½ minutes per side.
Once ready, sprinkle some dried grated coconut on top and let cool
Serve with your favorite hot drink
